kumquat salsa

I am constantly enamored by nature’s lovely ways. Sometimes it’s easy to lose sight of it when it’s so cold and blistery outside, but take a peek at your local market and you’re sure to find some beauty. Particularly if you happen to find a basket full of kumquats. If you’re not familiar with kumquats, they’re super cute little citrus fruits about the size of large pecans. In addition to being mini and cute, kumquats have a sweet, edible rind with sour flesh. After bringing home a boatload, I needed to use up at least a handful of those orange gems, which is how kumquat salsa came about.

The hardest part about this recipe is slicing the kumquats into thin rounds. Once you’ve gotten past that you’re golden. Chop up a purple onion, toss in some cilantro, a pinch of salt and pepper and maybe a dash of hot pepper flakes if you’re feeling spicy. Let that hang out for awhile so the flavors can meld. Right before you’re ready to serve, slice up an avocado and stir it in with the other ingredients.

The result is a mash up of fresh colors, orange, lime green and bright purple that will leave you dreaming of tropical weather. To be honest, the avocado kind of uglied the salsa up, but I forgave it since it added a luscious creamy factor to the sweet zing of the citrusy salsa. Scoop it up with some tortilla chips or spoon it over fish or chicken tacos and you’ll be glad you did.

kumquat salsa
makes about 1 1/2 cups

1 cup kumquats, thinly sliced and seeded
1 medium red onion, chopped
2 Tablespoons cilantro, chopped
pinch of salt
pinch of pepper
1/4 teaspoon hot pepper flakes, optional
1 avocado, sliced into 1/4 inch chunks

Toss the kumquats, onion, cilantro, salt, pepper and pepper flakes if using in a medium bowl. Let sit for at least a half hour.
Just before serving, cut up avocado and gently mix into salsa.
Serve with tortilla chips or over fish or chicken tacos.

    I wouldn’t have thought to use kumquats this way! ‘Tis the season, so I’ll have to give this a try. I bet jicama would be nice in this too.

    I don’t think I’ve ever tried kumquats! Sound’s good, I wonder where I can find some.

    I just made a kumquat and cranberry chutney the other day. This looks wonderful and would be great topped on a piece of salmon that I happen to have in the fridge.

    This looks yummy, i love different types of salsa. I’ve never seen or tried kumquats before, but will certainly give this a try if I come across them now.
